Gluten-free rice pancakes

Ingredients for 5-6 mini pancakes:

70g of rice flour (Caputo mill)

120ml of vegetable milk

1 egg

1 teaspoon of baking powder

Whisk the egg, mix it with sifted flour, vegetable milk and baking powder, then pour this cream slowly in a pan and cook each side for about 1 minute. Garnish as you like, with jam, honey, spread creams, coconut flakes and enjoy them with seasonal fruit.
