Linguine Gluten Free with Shrimp, Zucchini and Hot pepper

A first course that smells of the sea, enriched by the delicate flavor of zucchini and the strong character of Hot pepper Ideal for surprising with simplicity and taste!

Ingredients for 4 persons:

  • 320 g of Linguine Vittoria La Classica
  • 250 g shelled and cleaned shrimps
  • 2 medium zucchini
  • 1 clove dGarlic
  • 1 fresh Hot pepper (or q.b. dried)
  • 50 ml dry white wine
  • Extra Virgin Olive Oil, salt to taste.
  • chopped fresh parsley (optional)

Preparation:

  1. Prepare the zucchini: wash the zucchini, cut them into thin rounds or julienne strips, and keep them aside.
  2. Cook the dressing: in a large skillet, heat dlittle oil with the crushedGarlic clove dAdd the sliced Hot pepper and let it season for a minute. Add the zucchini and cook for 5-6 minutes until soft.
  3. Add the shrimp: pour the shrimp into the pan, deglaze with white wine and let it evaporate. Cook for another 3-4 minutes, until the shrimp change color. Adjust salt.
  4. Cook the pasta: Meanwhile, boil the linguine in plenty of salted water and drain when al dente, reserving a cup of the cooking water.
  5. Saute and serve: transfer the linguine to the skillet with the sauce, adding a little cooking water to mix it all together. Saute for a minute, sprinkle with fresh chopped parsley and serve immediately.
