
Strawberry Roll with Delicake Flour

For the roll
Beat 4 egg yolks with 100 g of sugar.
Add 1 teaspoon of vanilla, 80 g of rice flour, 20 g of starch and 1 teaspoon of yeast.
Incorporate 4 egg whites beaten until stiff with a pinch of salt.
Pour the mixture into a lined pan and bake at 180Β°C for 10-12 minutes.
Turn the dough out onto a damp cloth, peel off the paper and roll up. Let cool.
Stuffed
Cut 250 g of strawberries into pieces, add lemon juice and icing sugar.
Whip 200 ml of vegetable cream.
Unroll the cooled pastry, spread the cream and distribute the strawberries.
Roll it up again.
Decoration:
Dust with powdered sugar and decorate with whole strawberries. Chill in the refrigerator for an hour. Cut into slices and serve.
