
Neapolitan Caponata with gluten free freselle

Neapolitan caponata is a simple, fresh and flavourful dish, perfect for summer and ideal to prepare with our gluten-free freselle. The peculiarity of this recipe is in the fresella, which must be broken and sponged, to better absorb all the seasoning and give a unique consistency.
Ingredients
- Gluten-free freselle (broken and sponged)
- 300g fresh cherry tomatoes, chopped
- 150 g of quality tuna (in olive oil or natural)
- 100 g green or black olives, pitted and sliced
- A few anchovy fillets (optional)
- Fresh basil to taste
- Extra virgin olive oil to taste
- Salt and black pepper to taste
Preparation
- Break the freselle into large pieces and dip them lightly in water to soften them. Squeeze them gently so that they remain spongy but not too soft.
- In a large bowl, combine the cherry tomatoes, crumbled tuna, olives and chopped fresh basil.
- If you like, add a few anchovy fillets for an extra touch of bold flavor.
- Season everything with extra virgin olive oil, salt and pepper to taste, then mix well, being careful not to break the fresella too much.
- Let it rest for a few minutes to let the flavors blend and serve fresh.
